Ingredients
1 1/2 tsp grease
1 1/2 tsp honey
1 egg
3/4 cup +1 tbsp milk
1/2 cup all-purpose flour
1/4 cup whole wheat flour
1/4 cup cornmeal
1 tsp salt
1 1/2 tsp baking powder
additional grease for frying
maple syrup

Directions
Grease a 1/4 cup measuring cup and put your cast iron pan over a low heat to warm it up. In a large bowl combine the honey, egg, milk and the warm grease. Add dry ingredients and stir until smooth. Add enough grease to your pan to coat the bottom. Using a well-greased measuring cup, scoop out the batter. Pour it into the pan to create round pancakes. When the pancake edges start to curl under and bubble, flip and cook until both sides are browned. Serve with maple syrup, and garnishes of your choice!
